Tempt My Tummy Tuesday: Cowboy Pasta


Cowboy Pasta



2 Tablespoons Olive Oil
1/2 whole Large Onion, Diced
2 cloves Garlic, Minced
2 pounds Ground Beef
Salt To Taste
Freshly Ground Black Pepper, To Taste
1 teaspoon (generous) Ground Thyme
1 Can of diced tomatoes + ½ can water
1/4 cup Freshly Grated Parmesan Cheese
1-1/2 pound (to 2 Pounds) Rigatoni

Heat olive oil in large skillet or pot over medium-low heat. Add onion and cook a couple of minutes, until starting to turn translucent. Add garlic and stir, cooking 1 minute, making sure not to brown the garlic.
Add ground beef and cook until brown. Drain most of excess fat. Add salt, pepper, and ground thyme. Stir to combine. Dump in canned tomatoes with their juice. Stir, reduce heat to low, and cover pot. Cook for 30 minutes, stirring a couple of times. Uncover the pot and cook an additional 30 minutes.
Cook rigatoni according to package directions—don’t overcook! Drain and place individual portions into bowls.
Stir in 1/4 to 1/2 cup grated Parmesan into the sauce. Check and adjust seasonings. Ladle sauce over cooked pasta, sprinkle with more Parmesan, and serve.
Serve with Cheese toast and a salad.

Tempt My Tummy Tuesday: Chicken Noodle Dinner


Chicken Noodle Dinner


Ingredients:



  • 9 ounces extra-wide egg noodles


  • 6 cups chicken broth


  • 1/4 cup & 2 tablespoons cornstarch


  • 1 pound & 2 ounces broccoli


  • 15 ounces canned chicken breast


  • 1/4 teaspoon pepper


  • 1/4 teaspoon garlic salt


Directions:



  1. Fill a saucepan with water and heat on high until boiling


  2. Preheat oven to 400 degrees.


  3. Add noodles to boiling water and continue cooking on high, stirring occasionally.


  4. Cook until tender (about 10 minutes).


  5. While pasta cooks, mix chicken broth with cornstarch. Heat in a saucepan on medium high heat.


  6. Place brown and serve rolls on a baking sheet and place in hot oven.


  7. Chop broccoli and add to saucepan with chicken broth. Stir.


  8. Drain canned chicken and add to saucepan with broth and broccoli. Stir.


  9. Drain and rinse pasta. Set aside.


  10. Continue cooking sauce until it reaches the desired thickness.


  11. Add noodles and stir to coat.


  12. Turn heat to low and continue stirring until noodles are warm.

Serve with dinner rolls and a side salad.


Serves 6

here's to new beginnings... and a GIVEAWAY!



Let me start by telling you all how much I have missed blogging. It is the perfect getaway and the most precious log of life events, and I am ecstatic that I decided to get back into it.


That being said...


{the babies}:
YA'LL they aren't even babies anymore!! Grace is 3 1/2 and Jacob is 1 1/2. ohmygoodness!! Can someone please tell me how time goes by so fast??
Grace is doing very well in school. She can count to 20 in spanish and say her alphabet in spanish. And, she is quite the artist! She loves her little brother and does everything in her power to "help" me with him. She is such a precious child, a beautiful little girl. I adore her more than words can say.










Jacob is doing SO good! He is running around like a little man and he is quite the dare devil, nothing hurts him, ya'll! He is so strong, so sweet, and the cutest thing I ever did see. He's walking, somewhat talking, and moving around so fast!! He is so smart. He loves gummie snacks, his pawpaw, Dora the Explorer (I know :/) and playing outside!!

For the past 3 years I have been attending the University of Houston's (GO COOGS!) Business school... well, I FINALLY graduated in December 2010, and I am now the proud bearer of a Bachelor's degree in Business Administration with a concentration in marketing!






I was unemployed from late October until 3 weeks ago. It was extremely hard finding a job as a new graduate in my field, and I tried for 7 months to do it on my own, and finally swallowed my pride and decided to go through a head hunter. In NO time I was interviewing and offered a position with Chevron in their Occupational Excellence Group which is part of their Health, Environmental, and Safety Unit. I am so proud of my job, and I am really excited to pursue my career path here.

He has walked into my life with hs head held high, with the most patience and understanding I have ever known a person to have.
Knowing of my past with Justin, and with arms wide open totally accepting of my children. He adores them, and they adore him. He is my rock, my best friend, and my go-to on sad days and even more so on happy days. He has helped me realize the woman that I really am and has shown me what I truly deserve in life. He is hard-working, caring, intimate, honest, special, warm, and the keeper of my heart. I am so excited to see what the future holds for us, because I know it will be an amazing journey.

Jacob Ryan is here!

WHEW! We have been SO busy! But, couldn't be more thrilled of the arrival of Jacob. He is just a sweet little bundle of joy.
He came into our lives on December 3, 2009 at 4:27 PM
Weighed 8 lbs 6.5 oz and was 21 1/2 inches long, BIG BOY!
He is healthy and happy, and I am doing great. The labor was super easy and so fast! I am so thankful for all of your thoughts and prayers!
Grace just adores her little brother and is such a big helper! She helps feed and change him, and loves on him all the time. She is such a little mama. I love watching her with him.
Here are a few pictures of our past few days, sorry there aren't many, my computer is acting up and this is all I can get to for now, but, don't you worry, there will be more posted as soon as possible!

In other news, we just found out that Justin will be leaving me again, only this time, much longer :( He will be headed offshore for a DIP test (don't ask) December 28th (which means he will miss our 3 year anniversary on the 30th) and will not return until sometime late January. I am, to say the least, devestated that he will be gone so long so soon into Jacob's life. So any support, prayers, and company would be FAB!
